is traceable and certified
Genova is made by the flavours and tastes of its cooking tradition.
Just like the flavour and taste of the pesto, that I and Dori make, in Milan or in Gallura.
We use many walnuts to prevent the minty flavour
that pesto gains when you make it outside the city of Genova.
The true genoese pesto does not taste like mint.
